CFU Is Not the Whole Story
Probiotic marketing has settled on one number, and it's the wrong one. Walk the shelf and you'll see 10 billion, 50 billion, 100 billion, and increasingly numbers that read more like a fundraising target than a dose. The implication is obvious and entirely deliberate: bigger is better, so buy the biggest.
CFU is a real measurement and it isn't meaningless. But on its own it tells you almost nothing about whether a probiotic will do anything, because it answers only one question — how many — while staying silent on the three that decide the outcome: which organisms, whether they arrive alive, and whether the number is still true by the time you swallow it.
What a CFU number actually measures
CFU stands for colony-forming units, and it's a count of viable organisms — how many are alive and capable of multiplying at the moment the measurement was taken. That last clause is where most of the trouble hides, and we'll come back to it.
Notice what the number does not describe. It doesn't say which organisms. It doesn't say whether they can survive the trip through your stomach. It doesn't say whether the count still holds after six months on a warm shelf. A CFU figure is a quantity detached from every quality that determines whether the quantity matters.
Strains, not species — and definitely not genus
Probiotic research is strain-specific, and this is the single most underappreciated fact in the category.
Bacterial names have three levels. The genus is the broad family — Lactobacillus, Bifidobacterium, Bacillus. The species narrows it. The strain, usually a code of letters and numbers on the end, identifies the specific organism. Two strains within the same species can behave quite differently, and the studies people cite when they talk about probiotics were run on particular strains, not on the family name.
So a label listing "Lactobacillus blend, 50 billion CFU" is telling you the surname of the organisms and nothing else. A label naming each strain down to its designation is telling you what you're actually buying, and lets you go and read about it. Vagueness at this level is rarely accidental — naming a strain invites scrutiny, and a genus name invites none.
A large count of unspecified organisms is a large count of unknowns. That's not a better product than a smaller count of strains someone can point to research on.
Survival is the hurdle the number ignores
Then there's the journey. Between the capsule and the intestine where these organisms are meant to act sits the stomach — an acid environment capable of breaking down food, and more than capable of killing bacteria that aren't built to withstand it.
This is why delivery matters more than headline count. Fifty billion organisms that don't survive the stomach are worth less than a far smaller number that arrive intact. The relevant question isn't how many went in your mouth; it's how many reached the place they're supposed to work.
There are two broad ways to solve this. One is engineering the capsule so it opens further down rather than in the stomach. The other is using organisms with their own built-in protection — spore-forming strains that travel in a dormant, armoured state and activate once they're through. Either approach is a real answer to a real problem. A product with a huge CFU number and no mention of delivery at all has simply declined to address the hardest part.
The "at time of manufacture" trick
Here's the detail that turns a big number into a small one, and almost nobody checks it.
Live organisms die off over time. Heat, moisture, and time on a shelf all reduce viable count. So a CFU figure measured on the factory floor and a CFU figure measured eighteen months later in your kitchen can be very different figures.
Which means the phrasing on the label is doing enormous work. "100 billion CFU at time of manufacture" is a claim about a moment neither you nor anyone else will ever experience. "100 billion CFU guaranteed through end of shelf life" is a claim about the bottle in your hand on the day you open it.
Those two sentences can appear on products with identical front-of-pack numbers and describe substantially different products. A brand guaranteeing potency through expiry has to overfill and formulate for stability, which costs money. A brand quoting the manufacturing figure has to do neither. Read the qualifier, not just the number — and if there's no qualifier at all, assume the more flattering interpretation is the one being used.
Why more isn't automatically better
There's also a conceptual problem with the arms race. Your gut already contains a very large, established microbial population. A probiotic isn't filling an empty container; it's adding a specific, deliberate input to a system that's already running.
Framed that way, escalating the count starts to look less like a meaningful improvement and more like a marketing race that's easy to win. Any brand can raise a CFU number. Naming strains, engineering delivery, and guaranteeing potency at expiry are all harder, cost more, and don't fit on the front of a bottle as neatly.
That asymmetry is exactly why the number became the headline. It's the cheapest thing to compete on.
How to read a probiotic label
Four checks, in this order, and the count comes last.
First, are the strains named down to the strain level rather than a vague genus or an unnamed "blend"? Second, does the product say anything about how the organisms survive the stomach — an acid-resistant capsule, a spore-forming strain, some stated delivery strategy? Third, is the CFU count guaranteed through end of shelf life, or only at manufacture? Fourth, and only once those three are satisfied, is the count itself sensible for what you're taking it for?
A product that passes the first three at a moderate count is a better buy than one that fails them at a spectacular one.
